My husband has been on a health kick ever since he started seeing a personal trainer. I love that he’s trying to eat more healthily. Lately he’s been cutting back on gluten, as well as following many aspects of a Paleo diet. He no longer eats cereal for breakfast, and I’ve noticed that he’s seriously cut back on bread at lunch.
He asked me if I could make him breakfast muffins with eggs, sausage and veggies. His personal trainer described them to him, and he relayed the idea to me. Without a recipe, just an idea, I went ahead and made up something as he described it. It worked!!
I have to give myself a pat on the back for this one. These gluten-free protein-packed muffins are super yummy! What I love is that you can easily tweak the recipe to your liking – adding ingredients, omitting ingredients, etc. My husband asked if next go round I’d add more vegetables – absolutely!
Once we you whip these up, you’ll be glad you did. Your breakfast will be set all week-long! I’d grab one or two in the morning, so would my husband, and even my kids got in on the action. Breakfast was super easy egg muffin week – it was a sad day when the muffins were gone.
The bad part is my husband has been begging me to make another batch of them. I’ve been so sick this week – an excuse to be lazy no doubt – but now that I’m feeling better today, I’ve promised him I would whip up another batch tonight. I also plan to make a batch for Passover week – this way no one has to worry about what they’ll eat to start their day!
