I’d like to share with you today a gluten free recipe for Israeli Salad. I find Israeli Salad to be full of bold flavors, fresh herbs, and all around healthy ingredients. What makes an Israeli Salad different from a regular salad is that Israeli salads include finely chopped vegetables. Traditional Israeli Salads include diced tomatoes and cucumbers, and can include a variety of other crisp vegetables and herbs. It’s generally topped with fresh lemon juice and/or olive oil.
The beauty of Israeli Salad is you can mix and match ingredients to your liking. I decided to use a slew of fresh vegetables, fruits and fresh herbs I had on hand to create this wonderfully flavorful salad. Let’s just say I can’t wait to make this again – it’s that good and of course, good for you!!
I used this dish as a topping to grilled chicken rice bowls. It also can be a fabulous topping for grilled fish, meats, or simply a wonderful side dish at your next BBQ or dinner party.
