Cooking with ground turkey (or ground beef if you prefer) is so easy to do in a pinch; but we get bored with the regular options at my house. We typically use ground turkey to make marinara turkey meat sauce or taco meat. So I turned to the Internet to find a recipe that would help me change up dinner this week and still allow me to cook with ground turkey. I came accross a few idea, including this one from Food.com that inspired the dish below.
This week I also bought Organic Edamame Spaghetti from a company called Explore Asian Cuisine. You can buy these amazing noodles on Amazon. I’m always looking for gluten-free noodle alternatives and swaps as I haven’t found a gluten-free noodle that is good enough to justify the calorie count. I feel like the Edamame Noodles would go well paired with an Asian dish.
Now about those noodles… Edamame Spaghetti is 200 calories per serving. But that’s not the exciting part. The exciting part is that each serving contains 24 grams of protein and 11 grams of fiber. The only ingredients on the list are organic edamame (green soybeans) and water. These noodles are packed with Vitamins A and C, Calcium, and Iron. If you can find these online or in the store, buy them. They cook up well and are delicious! They feel and taste like real noodles without all the empty calories and carbs. They taste amazing!!
